Perfect Omelets for Dinner

I first tried making omelets not long ago when a client gave me a dozen fresh eggs from her farm. Of course I had no idea how to make an omelet so I did what every modern-age woman does when she needs advice, I googled. Tonight we're making omelets again (yes there's some fat involved but the cheese and eggs are good sources of protein and calcium), and I thought I'd share the link for making perfect omelets. It really isn't that difficult, but why learn from trial and error when you can make it perfect from the start? We're using shredded sharp cheddar and crumbled patty sausages in ours.

Nancy, that is too funny! You mean your mom never taught you how to make an omelet? Well, come to think of it, I guess mine didn't either. But I figured out many years ago how much I loved them, so I've made them, usually only for breakfast though, for my family forever! I usually make them with each family member's own favorite ingredients, which makes them like a "made to order" restaurant of sorts. But the one ingredient besides cheese that is a hands-down favorite in our house is bacon! The link is really detailed, which is good for first-timers I guess. Maybe I'll print it out and give it to Tessa at one of those "share a recipe" bridal showers! Good luck and enjoy your omelets-we love them!

I guess my family wasn't big on omelets. My grandmother made delicious pancakes every weekend so I know a bit about those. She also made us cinnamon/sugar toast or "dip it" fried eggs with toast. I've always liked sausage better, but Marcus really enjoys bacon.
